I have only read reports for dock starts, where it seems that the pro wings are better once you know how to keep a high speed while pumping, the traditional wings are more tolerant when you lose some speed, as the pro will sink sooner.
My advice would be to get a Pro, because they are reported better for powered foiling anyways (Wing, Kite, pulled by a friend...) so if you do not manage to start from flat water with just a paddle, you may then enjoy using a sail with it. And let's face it, even if you manage flat water starts, its seems so tiring that you do not see people doing it regularly anyways.
I guess you have seen this howto: (Eric is a to race pro, with huge paddle power). You could try contacting him for advice, he uses Go Foils,but I guess the differences between the high/low aspect foil wings apply roughly to all brands.
