If unhooking is a big problem, that's good news, since that's easy to fix. Practice unhooking by just moving your hips forward a bit, and letting the line fall out. Then, focus on really hanging down on the boom so you can control the pressure. Get low! The bent knees will help later, too.
The good thing about this is that you can practice going in a straight line, until it becomes fully automated.
At the ABK windsurfing camps that I often attend, the unhooking is always a big deal when it comes to learning jibes, since it is very easy to disturb the board by moving too much and opening the sail when unhooking.
