Different chemical reactions, one is using maillard reaction to give flavour to green beans that start out smelling like a cross between cut grass and old sneakers. They other is using heat and pressure to extract oils etc - you're not
cooking the grinds into your cup, you're trying to coax the good stuff out without affecting them too much.
