Since the Infinities only have two cams, they're a lot easier to rig and I think they're a lot less mast-specific than the Pryde sails.
I was in a similar position to you about a year ago, I got rid of all my old Pryde sails and SDM masts, and went down the Ezzy/RDM route. Couldn't be happier

I have a 2007 7.5m Infinity that replaced a 2000 model 7.5m NP V8, and sadly I found that the V8 seemed to be the faster sail. I played around with the downhaul/outhaul settings on the Ezzy, but haven't found a combination that works as well as the V8. Are the Ezzy sails meant to be anywhere near as fast?
When I was in Safety Bay earlier this year I bought a well worn RS4 and compared it against the Infinity. It left it for dead and felt lighter. I rigged it on a 460 powerex, which was not the right mast for the RS4, but it still worked well.
I am hoping the Infinity will die so I can justify a new NP V8 or RS sail. Fat chance, the thing will last longer than I will.
I guess the only thing this proves is everyone's experiences are different :)
