With mine it felt like you were riding in the water rather than on it. A nice feeling for sure, and felt good for balance, response, etc. With snow skiing they've done the height thing to death and consensus is higher is better for carving, lower is better for tricks, balance, etc. And a small amount makes a big difference.

And if the rails are the thickest part, wouldnt that just slide and not drive???
With mine it was only thin anyway, but wide so it was kind of slidey but really fun. Small wave board.
Shaper of mine had a whole theory on how his boards performed with the concaves. There's a current topic on concave decks on surfermag.com/forums and also if you search swaylocks it's been discussed many times. The rails don't have to be thick, they can just be normal but redistribute the foam elsewhere. Back foot concave is tiny or nonexistent, front foot is deepest, concave fades in front of that, bit like bottom concave.
