Thanks for the positive comments everyone... Old Bar is definitely an amazing spot. If you hit it on the right day, it's for sure one of the best kiting locations in the world.
As for the copter, it's something I've been working on for almost 2 years now. My mates down here in Sydney can attest to all of the trials/tribulations I've been through with a few different setups. This setup seems to work perfectly for this application. It can handle 20knots without an issue, and could probably fly in up to 25 knots (with a shorter battery life). The AR Drone is a good intro to multi copter flying, but it's really a toy in comparison. It definitely could not fly in any sort of wind as it doesn't have the weight/power to support it. If you're looking for an a good intro kit, I'd probably look at the hoverthings setup:
