Just thought I'd add, there is an awesome recipe for rabbit, that I've cooked many times, which my kids loved. (never wrote it down, so from memory)
Break up the carcase into "normal cuts", such as back legs including the haunch, front legs including the shoulder, and the backbone including the backstraps.
Pan fry the pieces on pretty high heat to brown them. Take out of pan.
Pan fry some finely chopped bacon and field mushroom, a little bit of finely chopped onion, and let the juices be, without reducing.
Add the rabbit pieces to the pan, and add whatever white wine of your choice is left, and simmer for a bit.
Pinch of salt and pepper, and spices to taste, and let simmer while pasta goes on.
Cook tagliatelle pata as per recommenations on packet.
Serve awesome meal to family, explaining was caught and processed in person, and enjoy rest of sixpack of nice wines with friends.
Add too much and you lose the distinct flavour of fresh rabbit, and enjoy the fact, that if you caught it wild, you have reduced the population of an invasive species by a bit.
